SKINNY QUICHE

Skinny Quiche
4 eggs (or 1 cup egg substitute)
1/2 cup low fat biscuit mix
1-1/2 cups skim milk
pepper to taste
4 oz shredded 2% cheddar cheese (or other cheese if desired)
1/2 cup lean chopped ham
(Optional - onion flakes, spinach, peppers, whatever you want)
Melt butter.
Add eggs, milk, pepper and biscuit mix Beat WELL -- I used an immersion blender
Stir in ham Add cheese to top and press lightly to get a little below surface Placed in greased 9" pie pan (greased with nonstick spray)
Bake at 350 for 45 minutes. I like mine well done -- gets a little crunchy -- may need to add a little more or less --
