RICE PUDDING

Super easy!!
Creamy Rice Pudding
Ingredients:
1 cup uncooked rice (not minute rice)
4 cups coffee creamer of your choice
2 cups water
1/2 cup raisins (see note)
Cinnamon, as much as you like
Combine creamer, water and rice in large sauce pan. Stir till all combined. Turn heat on high. Bring to a medium boil. Reduce heat to the lowest setting and simmer for 30-35 minutes covered. Check halfway through and stir and cover. When rice is tender it's done! It will look a little runny, but as it cools it will thicken up. At this time add the cinnamon, raisins and vanilla extract if you choose. Enjoy😊. Makes 6 half cup servings.
**Note- to make the raisins soft and plump. In a smaller sauce pan bring water to a hard boil. Turn heat off and place the raisins in the water. Drain water off and place in Pudding

NAVY BEAN SOUP

Home made navy bean soup
1 pound navy beans rinsed. Do not soak.
1 onion diced
1 carrot diced
1 chicken bullion cube
2 bay leaves
1 cup cubed ham
10 cups water
salt and pepper to taste
Put all ingredients in large pot and bring to boil. Cover, reduce heat and cook until beans are tender, about 2 hours. Serve with crusty sourdough bread or corn muffins.
