Ok I know people say this all the time, but I have always been skeptical about things! Sloppy Joe's
Ingredients:
1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 medium tomato cubed
1/2 teaspoon garlic powder
1 teaspoon prepared Dijon mustard (or prepared yellow mustard)
156ml (5.5 oz) tomato paste (or 3/4 cup ketchup)
3 teaspoons brown sugar
salt to taste
ground black pepper to taste
Directions:
In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
Stir in the garlic powder, mustard, tomato paste, cubed tomatoes and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
Use your imagination! You can also add 2 Tbs of HP sauce, replace tomato paste with seafood sauce, add celery, etc.

SNICKERDOODLE PUMPKIN WALNUT BREAD 
Makes 2 loaves..
2 cups all-purpose flour
1 ½ cups white whole wheat flour (or all-purpose flour)
2 cups light brown sugar packed
1/3 cups granulated sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
½ tsp cloves
1 15-ounce can pumpkin puree 
1 cup vegetable oil
1/3 cup honey
1/3 cup water
½ cup of chopped walnuts
FOR THE STREUSEL TOPPING
mix these in a small bowl
½ cup flour
½ cup granulated sugar
½ tsp salt
2 Tbsp cinnamon
4 Tbsp butter
Preheat oven to 350 degrees F. 
Grease and flour two loaf pans and set aside.In a large bowl, whisk together flours, sugars, baking soda, baking powder, salt and spices.In a medium bowl, carefully whisk together pumpkin puree, oil, honey and water. add walnuts 
Add the wet ingredients to the dry ingredients and use a spatula to fold all of the ingredients together. Make sure to scrape the bottom of the bowl well, incorporating all the dry ingredients.Divide the dough between the two greased pans
Sprinkle with the streusel topping.
Bake for 1 hour or until a skewer inserted in the center comes out clean. Remove from the oven. Let rest in the pans for 15 minutes, then invert onto a cooling rack.

Ingredients
2 cans yellow kernel corn, drained
1/2 red bell pepper, sliced and chopped
1/2 green bell pepper, sliced and chopped
1/2 purple onion, chopped
1 cup mayonnaise
1 cup shredded cheddar cheese
5 ounces of chili cheese flavor Frito corn chips
Directions
Mix all the ingredients except the chips.
Add the chips in before serving otherwise the chips will get soggy.
Red peppers are expensive so you can just use green instead.

MUSHROOMS ORIENTAL
Ingredients
1/4 cup extra virgin olive oil
1/4 cup white vinegar
2 tablespoons soy sauce
2 tablespoons chopped garlic
5 cups mushrooms, about 1 pound
2 tablespoons thinly sliced green onions ( or more)
Directions
Combine oil, vinegar, soy sauce, garlic and mushrooms in a sauce pan.
Bring to a boil then reduce heat and simmer 15 minutes or until liquid is mostly absorbed stirring occasionally.
Cool, strain, add green onions and serve with toothpicks.

EASY BAKED CHICKEN PARMESAN
Ingredients
6 boneless skinless chicken breasts
1 (16 ounce) bottles light Italian dressing
1/2 cup light ranch salad dressing
2 tablespoons olive oil
5 tablespoons minced garlic, divided ( I used the pre-minced stuff from the jar)
2 1/4 cups shredded parmesan cheese, divided ( not the stuff in the green jar)
1 tablespoon dried parsley
olive oil flavored cooking spray
1/3 cup finely chopped white onion ( mild in flavor)
1 (8 ounce) cans tomato sauce
1 (6 ounce) cans tomato paste
3 tablespoons dried basil, divided
3 tablespoons dried oregano, divided
1/2 teaspoon salt
1/2 teaspoon black pepper
1 bay leaf
1 1/2 cups 2% mozzarella cheese, grated
Directions
The morning or the night before serving, combine italian dressing, ranch dressing, 3 tablespoons minced garlic and 2 tablespoons olive oil in a large zip lock bag. Squish bag around to combine all ingredients. Add chicken breasts to bag, close and squish until they are well coated in the dressing mixture. Put the bag in bowl (to prevent spills) and refrigerate all day or overnight up 24 hours.

Directions
When ready to cook, Preheat oven to 400*F. Then mix 2 cups parmesan cheese, with parsley, 1 1/2 tablespoons of the basil and oregano (each).
Spray a large baking dish (big enough for all six breasts) with olive oil cooking spray.
Remove chicken from baggie one by one and "dredge" in the cheese and spice mixture, until thoroughly coated in cheese mixture. Then place chicken in a single layer in the dish.
When all chicken is coated, place chicken in oven and bake for 20-25 minutes (or until the internal temp is 155*F).
While chicken bakes, in a large non stick sauce pan, make the sauce.
Spray sauce pan with olive oil cooking spray (or use 1 tablespoon olive oil but do not use another flavor spray). Then saute onions and remaining garlic until tender and onions are translucent.
Add tomato paste and tomato sauce to garlic and onions. Stir until smooth. Then add the remaining, oregano and basil and the other spices including the bay leaf. (At this point if sauce looks to thick for your liking add 1 tomato sauce can of water) Allow to simmer for the remainder of the baking time until you need it.
When chicken has baked 20 minutes, remove from oven and top each breast with sauce (to your liking, we cover the whole thing) then top with 1/4 cup of mozarella cheese (again to your liking) put baking dish back into the oven for 10 more minutes or until cheese is bubbly. Then switch your broiler on to brown cheese (optional).
Remove from oven and sprinkle with remaining parmesan cheese.
Serve it up, I have never had anyone not finish this!

DAVE ROBERT'S MAC AND CHEESE
Ingredients
1 (16 ounce) boxes rigatoni pasta
8 ounces sharp cheddar cheese, shredded
8 ounces monterey jack cheese, shredded
4 ounces parmesan cheese, grated
2 cups heavy cream
salt and pepper
Directions
Preheat oven to 350°F.
Prepare rigatoni noodles according to package directions, but add a good bit of salt to the water. Once cooked, drain but do not rinse the pasta.
Transfer pasta to a large mixing bowl. Add half the cheddar, monterey jack and parmesan cheeses, as well as the heavy cream. Stir well to combine, season with pepper to taste.
Transfer the mixture to a 9"x13" casserole dish. Sprinkle the remaining cheeses on top and bake for 30 minutes until golden brown and bubbly.

LAZY DAY OATMEAL CAKE
Ingredients
BATTER
1 cup uncooked rolled oats ( instant or regular, I used rolled oats)
1 1/4 cups boiling water
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
TOPPING
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup brown sugar
3 tablespoons cream or 3 tablespoons milk
3/4 cup flaked coconut
1/3 cup chopped nuts (optional)
Directions
In a shallow bowl soak oats in boiling water for 20 minutes.
Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
Beat in eggs and vanilla.
Sift and measure flour, sifting again with the soda and spices.
By this time the oats will be soaked and cool.
Remove beaters from creamed mixture and fold in soaked oats.
Directions
Sift flour mixture over and fold in.
Turn in a buttered 9x9" pan and bake at 350°F for 40-50 minutes .
Mix all the topping ingredients.
Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
Watch carefully.

GLUTEN FREE BANANA BREAD

Erika's Gluten Free/Allergy Free Banana Bread.
INGREDIENTS REQUIRED
-> 1 1/2cups - Robin Hood All Purpose Nutri Flour Blend - Gluten Free 
-> 1 Tbsp of Fleuschman's Baking Powder
-> 1 Tbsp of No Name Baking Soda
-> 1/2 Tsp of salt (hardly use salt-plus it is never around more than 1 week in my house!)
-> 3/4 Cup of Brown Sugar-Regular recipe is White Sugar
-> 3/4 Cups of Vegetable Shortening-stop sticking to pan! Vegetable Oil can be substituted.
-> 4 Organic Bananas-approx 1 1/2 cups of mashed banana (Family likes a much richer taste). You can use regular bananas.
-> 2 Eggs-I used normally what I have. Today used Xlrg. You can use Organic Eggs too. Too expensive for me right now!
Mix it all by hand! No mixer required!
Mix flour, baking powder, baking soda and salt together.
Next, cream together eggs, sugar, shortening/vegetable oil and bananas.
Fold in dry mix until creaming and bake at 350 degree. I used my Toaster Oven in Summer for everything!
Regular Oven - Bake for 50-60 until the centre is firmly set in middle or cracked on top!
Toaster Oven - Same time for me. Time may vary depending on size of toaster oven!
Let cool on rack and remove from pan after 10 minutes.
You can use the same ingredients for regular Banana Bread-Regular Flour and just omit the Baking Soda!
Next batch will put only half of baking soda/baking powder!

Ingredients
1 cup graham cracker crumbs
1/4 cup powdered sugar
6 tablespoons butter, melted
4 regular size milk chocolate candy bars, divided
12 large marshmallows
Directions
Preheat oven to 350 degrees Fahrenheit.
Combine graham cracker crumbs, powdered sugar and melted butter in a bowl.
Use a mini muffin pan and place a small scoop of crumb mixture into each cup.
Press the mixture to form a cup.
Bake 4 to 5 minutes or until edges bubble and remove from oven.
Break candy bar into rectangles and cut marshmallows in half.
Place one piece of chocolate into each cup and top with a marshmallow.
Bake for another minute or two or until the marshmallow is soft.
Remove and cool.
Melt the remaining candy bars and dip each s'more into the chocolate mixture.
Let stand until set and enjoy.

ROASTED ASPARAGUS WITH MUSHROOM
1 1/4 lbs medium asparagus, tough stem ends trimmed
1/2 lb medium white button mushrooms, stemmed nd quartered
2 tablespoons extra virgin olive oil
salt, perferably the coarse variety,and freshly ground pepper,to taste
2 -3 teaspoons balsamic vinegar or 2 -3 teaspoons sherry wine vinegar
Directions
Preheat oven to 425*.
In a non-stick baking baking sheet with sides, toss the asparagus and mushrooms with the oil and season with salt and pepper.
Spread the vegetables in a single layer.
Roast for 10 minutes or until the vegetables are tender and browned, turning once or twice.
Place vegetables on a serving platter.
Sprinkle vegetables with vinegar and toss gently to combine.
Season with additional salt and pepper as desired.
Serve warm or at room temperature.
Makes 4 servings.

CARMELIZED BAKED CHICKEN LEGS
Ingredients
2 1/2 lbs chicken legs
1 2/3 tablespoons olive oil ( to help it stop sticking to the pan)
1/2 cup soy sauce
1 2/3 tablespoons ketchup
3/4 cup honey
2 -3 garlic cloves, minced
salt and pepper
Directions
Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.
Pour over the chicken.
Bake in preheated oven for one hour, or until sauce is caramelized.
Could also use wings or pork ribs.

INGREDIENTS 
Makes24-48 Bars
4 eggs
1 2⁄3 cups granulated sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin puree
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Icing
1 (8 ounce) package cream cheese, softened
1⁄2 cup butter or 1⁄2 cup margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
DIRECTIONS
Preheat the oven to 350°F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.
Stir together the flour, baking powder, cinnamon, salt and baking soda.
Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 13 by 10-inch baking pan.
Bake for 30 minutes.
Let cool completely before frosting.
Cut into bars.
To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth.
Add the sugar and mix at low speed until combined.
Stir in the vanilla and mix again.
Spread on cooled pumpkin bars.

CRACKER BARREL MEATLOAF

Cracker Barrel Meatloaf

Ingredients
2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 ounces shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon mustard
Directions
Preheat oven to 350.
Beat eggs. Add milk and crackers. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.
Bake at 350 for 45 minutes.
Combine ketchup, brown sugar and mustard to make topping. Spoon half of the topping over the meatloaf after 30 mins of baking. Return loaf to oven for 10 more mins of baking. Spoon the rest of the topping over meatloaf, return to oven and bake for 5-10 mins more.
