FREEZER BISCUITS

 Freezer Biscuits

4 c. flour
1 tsp. salt
2 Tbsp. baking powder
1/2 tsp. cream of tarter
1 1/2 c. milk
1/2 c. butter, cold
1/2 c. shortening
Mix dry ingredients in large bowl with a whisk. Add butter and shortening to flour mixture. Using a pastry blender, cut butter and shortening into flour mixture until it resembles course meal and incorporated well.
Make a well in center of flour. Add milk to the flour mixture, stirring to mix well. This is where you want clean hands. Oh, and if you have rings on, be sure to remove them. Now dig in and squish the dough until it is a soft ball. Don't over mix or you will get stiff dough.
Lightly flour surface and roll dough out to about 1/4" to 1/2" thickness. Dip cutter into flour. Cut biscuits out in desired shape. Place on a baking sheet.
Place baking sheet with biscuit cut-outs into freezer. Leave for about 2 hrs. Remove and place in an airtight freezer bag. Return to freezer until ready to use.
TO BAKE:
Take out desired amount of biscuits and place in pan. Set on counter and allow to thaw at least 30 min. (You can take biscuits straight from freezer to oven. However, you will not get a full rise out of them and they won't be as fluffy.)
Preheat oven to 450 degrees. Bake biscuits for 10-12 min.
Makes: 15-20 biscuits (depending on size of cutter)
