Healthy Chicken Cordon Bleu
1 Tbsp. Dijon Mustard
2 Tbsp. Soy Sauce
2 Tbsp. Honey
1 1/2 tsp. minced Garlic
3 Tbsp. Olive Oil
3 Tbsp. Apple Cider Vinegar
6 Chicken Breasts, thinly sliced
6 pieced of Ham, thinly sliced
6 sliced Swiss Cheese
1/2 cup Mayonnaise
1 Tbsp. Dijon Mustard
1 Tbsp. Yellow Mustard
1 Tbsp. Honey
1/2 Lemon, freshly squeezed
Green Onions (optional)
1. In a small bowl, mix together mustard, soy sauce, honey, garlic, olive oil, and apple cider vinegar. Place chicken and this mixture in a zip-lock bag and allow to marinate for 1 hour (and up to overnight).
2. Preheat oven to 350 degrees.
3. Heat a nonstick pan over medium-high heat. Once heated, brown chicken breasts on both sides. Transfer to a baking dish.
4. Top each chicken breast with ham and a slice of swiss cheese.
5. Bake in preheated oven for 11-14 minutes, or until the cheese is melted and the chicken is cooked through.
6. In a small bowl, whisk together mayonnaise, mustards, honey, and lemon juice. Serve chicken topped with mustard sauce and garnish with green onions. Enjoy!

"I can't believe how much weight I had gained, I knew I had to do something drastic for my health, this isn't easy, but if this helps one person gain their life back, like me and become healthier, it is all worth it! I have much more to lose but I am amazed by my results so far!!
I remember as a child always wanting to be a normal size. I have been overweight all of my life. I remember not being able to wear the same clothes as my friends because they didn't make them in my size. The constant teasing, I can still feel the pain now, remembering as a child being teased and made fun of because I was overweight. It crushed me then, but made me a stronger person today.
I have done almost everything in my life to try to lose weight and keep it off except surgery. I tried lots of supplements, some not so healthy, fad diets, starving, counting calories, counting fat, counting carbs, which I prefer, I have a collection of weight loss books. I have lost and gained hundreds of pounds throughout my life. I can tell you how much fat, calories, or carbs are in any food item just from a lifetime of dieting. It has always been a never ending battle. I was always very healthy, never had any major issues.
On November 28, 2008, at 32 years old, I went to the hospital with my ears plugged and my head feeling like it was going to explode. They almost sent me home with antibiotics, I begged them to do more tests, they said I was too young for anything crazy....they finally did a chest x-ray.(My point is, know your body if something doesn't seem right, make the doctors run tests!) They found a mass the size of my fist underneath my sternum crushing my Superior Vena Cava. It took a week for the doctors to figure out how to treat me after a major surgery and plenty of other invasive testing. I had to have emergency Chemotherapy because my neck was swelling and I couldn't breath. I was in the hospital for 3 weeks with several life threatening complications. My kids were 7 and 4, all I could think of was, I have to be here for my kids. I give all the glory to God for the strength that somehow got me through those very dark days. I went through 9 months of Chemotherapy and Radiation treatments, I am healed forever, Praise the Lord and thank you Jesus!!
It was a very long road to recovery and getting back to close to normal. I will be forever changed, but for the better. Since then I was so tired all the time and I kept gaining weight, I knew I needed to do something to get this weight off and change my life, but I couldn't do it. I had zero energy to exercise, I couldn't stay on a diet more than a month without eating something I shouldn't which would just make me gain the weight I lost back, and more.

Lemon Chicken Sorrento (Copy Cat OG) YUM!!!! :) :) :)
Grilled chicken breasts in a citrus honey glaze served with lightly seasoned broccoli, artichokes and roasted vegetables. Topped with Fresh Parmesan Cheese.
¼ cup of honey 
¼ cup of lemon juice 
2 tablespoons of orange juice 
1 teaspoon chili paste
¼ cup of white wine
4 chicken breasts, cut in half lengthwise
3 tablespoon of olive oil
2 lemons, halved
Fresh chopped parsley
Parmesan Cheese
In a sauce pan mix honey, lemon juice, orange juice, chili paste and white wine. Cook on medium heat until it starts to boil. Reduce heat to low and simmer. Grill lemon halves until lightly browned remove from pan and set aside. Add 3 tablespoons of olive oil to the pan. Grill chicken breasts for about 6 minutes until cooked through. Place chicken on your plate and spoon sauce over top. Serve with vegetables of your choice. Top with fresh chopped parsley and grated parmesan cheese. Add a grilled lemon half. Enjoy! Recipe serves 4.

"My name is Shaan, but most people know me by my nick name.. Savvy.
This is my testimony. I was always a slender woman who was very conscious about my health, eating right and working out. I had my first son at 20 yrs old. Taco Avocado Bowls
1 lb. Lean Ground Beef (or ground turkey or chicken)
3 Large Avocados
6 Grape Tomatoes
6 Jalapeno Rings
1/2 Cup of Sour Cream
1/2 Cup of Salsa
3/4 Cup Sharp Cheddar Cheese - Shredded
5 Large Romaine Leaves - Shredded
***To season the meat use Cumin, Chili Powder, Onion Salt, Garlic Powder, Celery Salt, and Pepper. You can use a taco seasoning packet but it will increase the carb count quite a bit.
Cook the ground beef with all of your seasonings over medium-high heat until the meat is cooked all the way - Drain excess grease from the pan
Cut the avocados in half and use a spoon to scoop out the avocado. If you slide a large spoon a long the edges, you should be able to get it out in one piece
In the empty avocado shells, add 1/6 of the shredded lettuce into the bottom of each shell
Next, add 1/6 of the ground beef into each shell
Top each one with cheese, salsa, sour cream, tomato, jalapeno and avocado.

2 c. sugar ( I used 1 cup sugar and 1 cup stevia)
1 c. oil ( I used coconut oil )
3 eggs
3 c. flour ( I used gluten free flour )
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon (add to taste)
1/2 tsp ground ginger
2 c. grated fresh zucchini
1 c. nuts
1tsp. vanilla
Optional:1/2 cup chocolate chips ( I used carob chips)
1/4 cup brown sugar
Mix ingredients together - in order! Sprinkle with brown sugar.
Bake at 350°F, 50 minutes.
Great as muffins, too!
Makes 2 loaves.

1 Tbsp. minced garlic (I use fresh)
1 tsp.. Red pepper flakes
1 tsp Salt
1 Tbsp. Lemon juice
1/4 cup Olive oil
1/4 cup Water
2 (14 ounce) bag Frozen broccoli florets or 2 heads fresh broccoli,
cleaned and cut into florets
Heat oven to 350
Mix all ingredients together in a bowl, then add the broccoli lightly
tossing until all broccoli is coated.
Cook in oven on a baking sheet for 16 to 18 minutes.

Drain the peaches and empty into a large bowl. I just used my hands to mash them. Add flour, sugar and soda and mix well. Spray a 9 x 13 inch cake pan and pour in batter. Bake in a preheated 350F degree oven for 35 minutes. See recipe below for icing.
3/4 cup sugar
3/4 regular sized can of evaporated milk
1 stick butter or margarine
1 cup coconut (I used a little more than a cup of coconut)
1 cup nuts - Walnuts or Pecans
Boil everything but the nuts on top of the stove until thickens, remove from heat, stir in nuts and spread on cooled cake.

3/4 cup nonfat Greek yogurt
1/4 cup skim milk 
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar)
1 egg
1/3 cup applesauce
1 teaspoon baking powder
1 pinch salt
Preheat the oven to 400°F. Grease a square baking dish (I used 8"x8"). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares. MMMMMM..
