Here is the recipe for the chicken avocado cilantro salad that is simply out of this world and super healthy!!! Enjoy!! 3 Tbsp olive oil 1/3 cup Lime juice (fresh or bottle) 2 Tbsp chopped cilantro 2 cloves garlic (crushed) 1 tsp brown sugar Red chili flakes (to taste) 1 tsp salt Chicken breasts/tenders or thighs 1/2 yellow pepper 1/2 red pepper 1 small red onion Romaine leaves washed, and cut up 2 ripe avocados Put olive oil, lime juice, chopped cilantro, garlic, brown sugar, red chili flakes and salt into a bowl and mix well. Divide into half -- one you will be using as a marinade for your chicken via grill, or sautéed method. The other 1/2 will be your dressing at the end. Coat your chicken pieces into the 1/2 of the marinade, coat well and grill/sauté. Keep aside. Now in the same pan, saute the onion, and peppers - set aside. Cut up 2 avocados and slice. On a bed of lots of romaine lettuce, add chicken, onion pepper mix, and avocados. Pour remaining marinade dressing over the entire bowl and mix well! That's it!! Robust flavors, your tongue is going to explode with the infusion of all these wonderful delicious warm/cold awesomeness!!! Yummy, flavorful, warm chicken and peppers mixed in with a lime cilantro dressing on a cold bed of romaine lettuce and avocados -- DELICIOUS!!!!!! Don't lose this winner!! Makes about 2 servings (less than 150 cal/serv) 1 good size Haas Avocado 2 t dark cocoa powder 1 big T organic honey or pure maple syrup (I also sub just stevia when making for myself which cuts the sugar out!) 1t Mexican vanilla if available (WAY better flavor! But regular French vanilla can be used also just use 1/2t) A dash of cinnamon
