“Okay for all of you waiting for my before and to this day progress…Here I am, Regan..I am a hard case.(at least on my self) I know some will say you..? Really?. I am sorry but we all have our inner demons..Skinny or fat.. SLOW COOKER CHICKEN AND BROCCOLI



Slow Cooker Chicken and Broccoli Over Rice
Ingredients
6 - 8 Chicken thighs cut up (or 3 - 5 breasts cut up)
1 can Cheddar cheese soup
1 can Cream of chicken soup
1 can Chicken broth
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp cajun seasoning
4 cups Cooked rice
3 to 4 cups Broccoli (florets fresh)
1/2 cup Greek yogurt (or sour cream)
1 cup Shredded cheddar cheese
Directions
1. Put everything in except greek yogurt and shredded cheese in the slow cooker.
2. Cook on low for 6 hours or on high for 4.
3. In a rice cooker (or however you like), cook the rice.
7. Stir in sour cream and cheddar cheese with the crock pot mixture.
8. Stir, Enjoy over a bowl of rice.

A STORY



A man came home from work and found his 5 children outside, still in their pajamas, playing in the mud, with empty food boxes and wrappers strewn around garden, The door of his wife's car was open, as was the front door to the house and no sign of the dog, walking in the door, he found ...an even bigger mess. A lamp had been knocked over, the throw rug was against one wall, In the front room the TV was on loudly with the cartoon channel, the family room was strewn with toys and various items of clothing. In the kitchen, dishes filled the sink, breakfast food was spilled on the counter, the fridge door was open wide, dog food was spilled on the floor, a broken glass lay under the table, and a small pile of sand was spread by the back door. He quickly headed up the stairs, stepping over toys and more piles of clothes, looking for his wife. He was worried she might be ill, or that something serious had happened. He was met with a small trickle of water as it made its way out the bathroom door. As he peered inside he found wet towels, scummy soap and more toys strewn over the floor. Miles of toilet paper lay in a heap and toothpaste had been smeared over the mirror and walls. As he rushed to the bedroom, he found his wife still curled up in the bed in her pajamas, reading a novel... She looked up at him, smiled and asked how his day went. He looked at her bewildered and asked, 'What happened here today?' She again smiled and answered, 'You know every day when you come home from work and you ask me what in the world do I do all day?...
''Yes," was his incredulous reply..
She answered, 'Well, today I didn't do it.

NATURAL REMEDY FOR KIDNEY STONES

CROCK POT TACO SOUP

Crock Pot Taco Soup
Ingredients:
1 lb. ground beef, browned and drained
1 can petite diced tomatoes
1 can light red kidney beans, undrained
1 can pinto beans, undrained
1 small package frozen corn
1 envelope dry Hidden Valley Ranch Dressing Mix
1 envelope dry Taco Seasoning
1 small onion, chopped
Garnishes:
shredded cheese
sour cream
tortilla or corn chips
1. Combine all ingredients, except chips, cheese and sour cream in crock pot.
2. Cover. Cook on Low 4-6 hours.
3. Garnish individual servings with chips, cheese and sour cream if desired. ~Enjoy~

TRES LECHES CAKE

One of my favorite cakes is Tres Leches Cake, meaning (Three Milks Cake). This is a Mexican inspired cake that is so yummy and so moist. TRES LECHES CAKE 
.
Ingredients:
1 - 18.25 ounces package yellow, french vanilla or butter recipe cake mix + 
eggs, oil and water to make the cake
1 - 14 oz can sweetened condensed milk
1 - 5 oz can evaporated milk
1 - 7.6 oz Nestle Media Crema (table cream) found in Latin isle or whole milk
1 - pint whipping cream + 4 tablespoons powdered sugar or
1 - 8 oz container whipped topping (cool whip)
sliced fresh fruit for garnish
strawberries

Directions:
Preheat oven to 350 degrees. Prepare and bake cake according to package directions for a 9x13 inch cake. Grease and flour a 9 x 13-inch baking pan.
Pour cake batter into prepared pan and bake cake until done, about 30 minutes. Remove cake from oven.
While cake is still warm, using a fork, or the back of a wooden spoon poke holes in the cake every 1/2 inch. In a large glass measure, stir together condensed milk, evaporated milk and whole milk.
Slowly pour the milk mixture all over the cake making sure to get the milk into the holes. Pour half of the milk mixture and let the cake sit for about 10 minutes, then come back and pour the rest of the milk over the cake.
The cake should absorb all of the milk if poured slowly. (If you don't want a really wet cake only use half of the milk mixture).
Allow cake to sit at room temperature for 30 minutes. Cover with plastic wrap or foil, and refrigerate for 30 minutes to an hour or until well chilled.
Frost the cake with cool whip or use fresh whipping cream. If using fresh whipping cream, whip the cream on high using an electric mixture.
Add 4 tablespoons of powdered sugar to the whipped cream. Garnish with fruit and chill until ready to serve.

RED VELVET CUPCAKE

RED VELVET CREAM FILLED CUPCAKES
You will need:
1 German Chocolate Cake Mix
1 Box of Instant Chocolate pudding
4 Eggs
1 Cup of Sour Cream
1/3 Cup Oil
1 oz Red Food Coloring
Blend all the ingredients but the food coloring until mixed
Add the food coloring and mix on high speed for 2 minutes.
Bake at 350 for 20 to 25 minutes
Frosting: (This is a recipe my Mom always made when I was growing up. It's light and fluffy - very good for filling)
1 Cup Milk
5 T Flour
Mix well and cook til thick (like peanut butter consistency)
Cool
In a bowl mix 1 cup of sugar and 1 cup of Crisco and 1 teaspoon vanilla
When the flour mixture is cooled - beat both mixtures until well blended
I used the rounded end of a spoon to make a hole in the center of each cupcake, then with a freezer bag, I piped the frosting into the cupcake then frosted.

HOMEMADE DARK CHOCOLATE

HOMEMADE DARK CHOCOLATE
Optional add-in's:
Cinnamon
Cayenne pepper
nuts, chopped
Craisins
dried cherries
coconut flakes
1/4 c. baking cocoa powder, unsweetened
2 Tbsp. light corn syrup (not maple)
3 Tbsp. coconut oil
NOTE: Honey will not set up well in this. Tested and it was a fail.
Blend all together until smooth and creamy. Pour onto buttered dish or waxed paper on a flat surface. Place in freezer until set firm.
Remove and break into bite size pieces. These remind me of Hershey's dark chocolate candy. Delicious!
Place into air tight container and return to freezer until ready to eat. It will melt if let set out long.

Ingredients:
1 lb Breakfast Sausage of your choice
6 Eggs
1/4 Cup of Milk
1 Green Pepper
1 Yellow Onion
1 Bag Southern Style Hash browns (thawed)
1/4 Cup Chicken Broth
1/2 Stick Butter
Franks Hot Sauce (to your liking)
3 Cups Shredded Cheese of your choice
Salt & Pepper to Taste
Directions:
Cook onions and green peppers till soft (about 10 minutes)
Mix Sausage in and cook till done
Add Thawed Potatoes, Chicken Broth, 1/2 Stick Butter, Hot Sauce and Salt & Pepper.
Stir gently so the potatoes do not break down!
Add 1 Cup Cheese and Stir.
If you are using an oven proof skillet then mix the eggs and milk and pour over the entire mixture. Add the two cups cheese to the top.
If you are not using an oven proof skillet transfer mixture to a casserole dish THEN pour egg mixture and cheese over it.
Bake at 350 until eggs are set and cheese is melted. Should take about 15 minutes depending on your oven.
