SESAME GINGER LEGS

Sesame Ginger Legs

Ingredients:
12 chicken legs
Marinade:
2 tsp minced ginger
2 tsp minced garlic
4 Tbs sesame seeds
1 tsp ground black pepper
1/2 cup soya sauce
3 Tbs dark brown sugar (or honey)
4 Tbs extra virgin olive oil

Directions:
Marinate legs in marinade overnight in fridge. Preheat oven to 425F. Remove legs from marinade and place in greased baking pan. Bake for 40-45 minutes. Add marinade to pot, bring to a gentle boil, stir constantly and lower heat if needed so it does not burn. Cook marinade for 5-10 minutes or until thickened. Pour over the cooked legs or serve as a dipping sauce. Enjoy!

COCONUT COOKIES

Michele Wrecsics’ Coconut Cookies
2 cups flour
¾ teaspoon baking powder
¼ teaspoon salt
¾ cup softened butter
1 cup sugar
1 large egg
1 teaspoon vanilla
1 ½ cup shredded sweetened coconut
Preheat oven to 375. Combine flour, baking powder, and salt in bowl. In another bowl, beat butter and sugar at medium speed until light and fluffy. Beat in egg and vanilla. Beat in flour mixture at low speed until combined. Stir in coconut.
Shape dough into a small ball in your hands. Drop on cookie sheet and flatten with a fork. Bake for 11-12 minutes. Transfer cookies to wire rack to cool down. Makes 3 dozen cookies.

1 LOAF FRENCH BREAD
BUTTER
1 8 OZ PACKAGE OF SHREDDED CHEESE
PARSLEY FLAKES
GARLIC POWDER

PREHEAT OVEN 350*
SLICE BREAD (NOT COMPLETELY THRU) OPEN EACH SLICE AND SMEAR BUTTER . SLICE FROM OPPOSITE SIDE (CRISS CROSS) THEN FILL SLICE WITH SHREDDED CHEESE AND SPRINKLE WITH GARLIC POWDER AND PARSLEY FLAKES.
WRAP IN ALUMINUM FOIL AND BAKE IN OVEN FOR 15 MINUTES .
THEN UNCOVER AND BAKE ANOTHER 5 MINUTES.

BLUEBERRY STREUSEL

Blueberry Streusel

Ingredients
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup milk
1/2 cup butter, softened
1 cup fresh or frozen blueberries
1 cup chopped pecans
STREUSEL TOPPING:
1/2 cup sugar
1/3 cup all-purpose flour
1/4 cup cold butter
Directions
Preheat oven to 375°. In a large bowl, combine flour, sugar, baking powder and salt. Whisk egg, milk and butter; stir into dry ingredients. Fold in blueberries and pecans. Spread into a greased 9-in. square baking pan.
For topping, combine sugar and flour in a bowl; cut in butter until crumbly. Sprinkle over batter. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Yield: 9 servings.
Note: If using frozen blueberries, use without thawing to avoid discoloring the batter

~ "Hey everyone. I wanted to post an update. 9 months with Skinny Fiber. This the the longest I have ever stuck with a "plan". I am so pumped for myself! CHEESEBURGER CUPS

Cheeseburger Cups

1 onion, diced
1 tbsp olive oil
8 oz. baby portabello mushrooms, chopped
4 cloves garlic, minced
1 1/2 lb hamburger
2 beef bullion cubes
3 cans crescent rolls
cheddar cheese to taste, grated
4 slices of bacon, diced
lettuce and tomatoes as desired

Cook onions in olive oil over medium heat until transparent.
Add mushrooms, cook for another 5 minutes.
Add garlic and cook for a few more minutes, set this mixture aside.
Cook hamburger, and then add the bouillon.
Mix the cooked hamburger with the onion/mushroom mixture, and set aside.
Line muffin tins with crescent rolls.
Fill the lined muffin tins with hamburger mixture, then top with cheese.
Bake according to crescent roll's directions, 11-13 minutes at 375 degrees F
Cool on a rack.
Top with lettuce, tomatoes and bacon

CRUSTLESS RHUBARB PIE

CRUSTLESS RHUBARB PIE

3 c chopped rhubarb
1/3 c flour
3/4 c sugar (or substitute)
1/2 tsp baking powder
1/2 tsp salt
3 extra large eggs
1 tsp vanilla
1 c milk
1/4 c butter melted

Preheat oven to 375.

Grease pie plate and spread rhubarb on the bottom.

Mix remaining ingredients in blender and pour over rhubarb.

Bake for 40-45 minutes until cooked and set in the middle.

Let set for 15 minutes before cutting.

Serve with vanilla ice cream, frozen yogurt or whipping cream...enjoy!

1 cup vanilla yogurt or plain if you prefer.
1/2 cup frozen blueberries
1/2 frozen banana
5 frozen strawberries

1. Add the yogurt, blueberries, banana, and strawberries into the blender. If you aren't using frozen fruit, throw in a couple of ice cubes.

Sharon's Homemade Reese Bars
1 cup sweet butter
2 cups creamy peanut butter
1 ¼ cup graham cracker crumbs
1 lb. powdered sugar
6 oz. pkg chocolate morsels
In saucepan melt butter and peanut butter together. Once melted, add graham cracker crumbs and sugar and mix until well blended. Press into a 9x13 baking dish.
Melt chocolate morsels and spread over mixture in pan. Refrigerate for 20 minutes until chocolate has hardened cut.

APPLE BROWNIE

Apple Brownie Pizza

1 1/4 c. flour
2/3 c. cocoa powder
1 tsp. baking powder
3/4 tsp salt
2 c. Splenda or substitute
1/2 tsp. Cream of Tarter
1/2 c. Egg Beaters
1 tsp. vanilla extract
1 c. Applesauce
1 c. apples, diced small

Preheat oven 350 degrees. 

Put apples in a dish and heat in microwave for 2 min on high.

Mix all ingredients together well. Fold in apples. 

Pour brownie mix into a greased pie pan. 

Bake for 22-25 minutes, or until toothpick inserted comes out clean.

Ingredients:
2 cups flour
2 teaspoons salt
1 1/3 tablespoons sugar
1 1/3 tablespoons baking powder
1 cup milk
1/2 cup vegetable shortening

Directions:
• Preheat oven to 425ºF.
• mix the flour, salt, sugar and baking powder in a mixing bowl.
• Make a indentation in the center of the flour mix then add the milk.
• knead in the shortening with hands kneading the vegetable shortening and flour in the milk mixing well.
• Add milk, if mixture is still a bit dry, and knead well.
• Turn onto floured board, and knead gently about a 1/2 dozen times.
• Roll dough in to 12 balls of even thickness.
• Place spaced evenly on baking sheet and brown in oven 10-13 minutes.

BACON BREAKFAST HASH

Bacon Breakfast Hash
Ingredients
4 cups cooked and diced potatoes.
1 lb bacon…
2 TBS reserved bacon grease
1/2 cup cheese
10-14 eggs
1/ 4 cup milk
S&P to taste
Directions
Fry bacon crisp and drain on a paper towel. Remove all of the grease except for 2 TBS. Fry the diced potatoes in same pan with the reserved bacon grease til slightly crispy on the edges.
Meanwhile in a medium bowl beat the eggs, milk and salt & pepper. (Go easy on the salt as the bacon is typically already salty).
Crumble bacon over the potatoes and then pour eggs over the top. Scramble the eggs in the potato bacon mixture until eggs are cooked through. Turn heat off.
Sprinkle the cheese over the top of the eggs and potatoes and cover with a lid until cheese is melted.
Enjoy!

Stuffing

Mashed Potatoes

Directions:
Cut the Pita Pocket in half and put a thin layer of mayo on the inside of pocket. Then you will put in a thin layer of cranberry sauce, stuffing, potatoes, and finally enough turkey to your liking. Then simple enjoy!

PEACH DUMP CAKE

Peach Dump Cake. (Made this yesterday and it was super good! We served it with ice cream, whipped cream and freshly grated cinnamon)

Ingredients.

1 (29 ounce) can sliced peaches in heavy syrup, undrained
1 (18.25 ounce) box yellow cake mix
1 Stick butter cut into pats

Directions

Preheat oven to 350 degrees.
Grease a 9 x 13-inch baking dish with spray
Pour peaches and heavy syrup into the prepared baking dish. Spread cake mix evenly over peaches. Arrange butter pats in even rows on the cake mix.
Bake in the preheated oven until top of cake is golden brown, 35 to 40 minutes.

LINDSAY'S STORY

This is such a hard picture for me to post so please no bashing. I reached my peak weight after my baby Kiersten was born in May of 2013. I tried diets, I tried low carb I even tried different diet pills. Either I couldn't stick to it or it just didn't work. I didn't really exercise but I clean houses during the day and chase my kids at night so by the time they were in bed I didn't have the energy to exercise.
