COCONUT MANGO STICY RICE

Coconut Mango Sticky Rice
You will need some sticky rice, usually found at the asian grocery store
1 can of coconut milk
1/4 cup of sugar
1/4 tsp sea salt ( I used pink himalayan)
1 tsp tapioca flour or cornstarch
Toasted sesame seeds
4-5 tbsp water
A large mango
Sticky rice: 3cups should be soaked in water for a couple hours.
Drain and rinse the rice after a couple hours.
Steam rice with a cheese cloth or you can do it the traditional way like I did with a weaved backet. Honestly, you can search on youtube to learn how to make the rice. Probably easier to watch it than for me to explain ðŸ˜‰
While that is steaming, heat on med low the coconut milk, water, sugar and salt until dissolved. You can add more or less sugar. Turn off heat once its all dissolved.
Once rice is done, put it into a large bowl and pour half the sauce onto the rice. Mix gently into rice and cover with a lid for about 10 minutes.
Next, mix the flour and a little water, like 2 to3 tbsp and put it into the other half of the sauce. Heat again on med low for about 4-5 minutes, I add probably another tbsp of sugar here. Take off the heat when dissolved and sauce is a little thickened.
Slice up the mango and place a few slices or so on a plate, put some of your sweet coconut rice on the plate and drizzle some of the sauce on top. Top with toasted sesame seeds and enjoy!😎
