FRESH PEACH COBBLER
½ C butter
1 C flour
2 C sugar (divided)
1 TBS baking powder
pinch of salt
1 C milk
4 C fresh peaches - sliced
1 TBS lemon juice
cinnamon (optional)

Preheat oven to 375 deg. Place butter in 9 x 13 dish and place in oven to melt.
In medium bowl, combine flour, 1 C of sugar, baking powder and pinch of salt. Add milk and carefully mix until just combined.
Pour into casserole dish on top of melted butter - DO NOT STIR
In saucepan, add peaches, lemon juice and remaining 1 C of sugar. Bring to a rapid boil, stirring frequently. Remove from heat and carefully pour peaches over batter - DO NOT STIR.
Sprinkle cinnamon over the top (optional). Bake at 375 for 40-45 minutes or until the top is golden brown.
