SWEET POTATO SHEPHERD PIE

Sweet Potato Shepherd’s Pie

2 pounds of sweet potatoes, peeled, cubed place in a sauce pan large enough to fill with water to cover the potatoes. Cook until tender, drain. Place a in medium size bowl add 
¾ cup of milk, ½ teaspoon of salt and 1/8 teaspoon of black pepper. Mash until smooth and set aside.
In a large skillet brown and chop 1 ½ pounds of ground beef (93 to 98%) add 1 cup of chopped onion. Cook until meat is no longer pink and is in smaller chunks.
Stir in:
2 cloves of minced garlic
¼ cup of Fat free Broth or water
¼ cup of tomato paste
10 oz. package of frozen peas and carrots (can use canned)
1 teaspoon of Worcestershire sauce
1 teaspoon of Dijon mustard
Cook till peas and carrots are thawed.
In a baking dish add the meat mixture, spread it out to level out. Add potatoes on top of the meat and spread out.
Bake at 350° for about 30 minutes till edge starts to brown. Let set for a few minutes before serving.
Makes 6 servings. 325 calories, 30g protein, 37g carbs, 6g fat, 7g fiber
