Cowboy Caviar 

1 can rinsed corn (fresh or canned) 
1 can rinsed black beans 
2 tomatoes (used grape tom’s) 
1 avocado chopped 
½ red or sweet onion 
Cilantro chopped 

1 lime - squeezed 
1 clove garlic - minced 
2 tbls oil (optional) 
1tbls vinegar 
Salt & Pepper to taste

Mix & chill for an hour. Serve with crackers or nacho scoups.
