Gluten Free Almond Chocolate Coconut Bars (Photo by Kim J.)
Ingredients: 1 cup slightly chopped almonds ½ cup coconut flakes ¼ cup almond butter ¼ cup honey 3 Tbsp dark chocolate almond bark (chopped) 1 Tbsp flax seed
Instructions: Preheat oven to 400 degrees. Use a 4X8 pan (or equivalent size), line with parchment paper or non-stick foil (very important to use or they WILL stick.) Combine all ingredients together, making sure all is coated evenly. Spoon onto lined pan and then use another piece of parchment paper to press and flatten mixture evenly in pan. Bake for 15-20 minutes. Check on them after about 12 minutes. Remove from oven and let cool 20-30 minutes before slicing.
