1 sweet or yellow onion, diced 3 cloves garlic, minced 2 stalks celery, sliced 1 green pepper, diced ½ head of cabbage, cored and chopped 2 carrots, sliced 1 head broccoli, sliced into bite-sized pieces 2 Roma tomatoes, diced with seeds discarded 4 cups low-sodium chicken broth 2 cups water 1 tsp basil 1 tsp oregano to taste: salt and pepper, 1 Tbsp turmeric, and 1 Tbsp cumin
Sautee onion and garlic in pan until onion is transparent then put into large pot with water and broth. Add celery, green pepper, cabbage, carrots & broccoli, simmer for 15 mins or until vegetables are tender. Add tomatoes and spices, simmer for another 15 mins. Enjoy!
