BAKED ZITI

Baked Veggie Ziti
Healthy and Yummy!

Ingredients:
Shown in picture.
Cook Rigatoni according to directions on package.
Drain, then in the same pot you cooked Rigatoni in,
add Spaghetti sauce or Marinara sauce.
( I used Chunky mushroom and Garlic )
1 small can mushrooms, 1/2 small can sliced black olives,
1 Roma tomato diced, 1 Tbsp. minced garlic, and
cooked Rigatoni. Mix all ingredients together, and put
in a 9 by 13 baking dish.
Slice 2 Zucchini into thin slices and cover the top of pasta
with Zucchini. Slice remaining Roma tomato thin and
cover over Zucchini. Salt and pepper to taste.
Then cover the top with 1 cup Mozzarella cheese,
and 1 cup cheddar cheese.

Bake uncovered 325 oven for 35 minutes.
Sprinkle with Parmesan cheese, add Garlic bread,
and a light salad. Yumm!!
