CROCK POT CORN CASSEROLE

Crockpot Corn Casserole
aka corn pudding

Ingredients:
1 box Jiffy corn muffin mix
1 can cream style corn
1 can whole kernel corn
1 stick butter or margarine, melted
8 oz. sour cream
2 eggs
**optional, 2 - 4 Tbsp sharp cheddar cheese, grated
Directions:
Combine all ingredients in a large bowl.
Spray crockpot with non-stick spray. Pour mixture into crock pot.
Cook on low for 6-8 hours, or high 3-4 hours
**optional, sprinkle lightly with grated cheese after corn casserole is done.
cooking on high will make a crispy ring around the outside of the casserole.
