High Fiber Apricot Muffins
Fresh from the oven with LOVE from
1 ¾ cups whole wheat flour 2 cups of chopped apricots 1 cup blueberries (optional) 1/3 cup ground flax 2 tsp. baking powder ½ tsp baking soda ½ tsp. salt (scant) 1 ½ tsp. cinnamon
1 cup hot water ½ cup of honey 3 beaten eggs 1/3 cup of oil 1 Tbsp. vanilla
Preheat 400F grease 12 muffin cups Combine dry, stir chopped fruit into dry ingredients, melt honey in hot water add oil and beaten eggs and vanilla, pour into dry mixing quickly, DONOT OVER MIX! If not using blueberries increase apricots to 3 cups
Fill muffin cups, sprinkle with 1 tbsp. oatmeal over tops followed by 1 tbsp. brown sugar
Bake 15- 20 minutes
