SALSA VEGGIE OMELET

Salsa Smothered Veggie Omelet

Serves: 2

1/4. c. bell pepper, diced
1 c. mushrooms, sliced
3 Tbsp. onion, diced
1/2 c. spinach leaves, chopped
1 Tbsp. olive oil
1/2 c. Egg Beaters
2 Tbsp. Chunky Salsa
1/4 c. Mozarella cheese, shredded (or your choice)

Saute veggies in olive oil on low heat until soft and tender. Add Egg Beaters and swirl around to cover all of veggies. Cook for approx. 2 minutes. Flip over and add cheese to center. Fold over one side over to cover cheese. Continue cooking until eggs are done.

Top with salsa and enjoy!
