BAKED HALIBUT

Family favorite
BAKED HALIBUT with ORZO
4 - 6 ounce Halibut Fillets
2 - Tablespoons Lemon juice
4 - Tablespoons EVOO
½ box orzo pasta
1 pint cherry tomatoes cut into halves
1 cup tightly packed spinach torn into pieces
Preheat oven to 375
Wisk together the lemon juice and the EVOO. Season with salt and pepper
Spray a cookie sheet with pam. Place fish on cookie sheet and drizzle with the lemon juice and EVOO/ Salt and pepper the fish to taste. Bake fish for 10-120 minutes or until it flakes easily with a fork or translucent in the middle
Cook and drain pasta. Put into large bowl. Add the tomatoes and spinach. Put in the rest of the dressing and mix gently. (can be served hot or cold)
