GRILLED CHICKEN ITALIAN PASTA SALAD
10-12 chicken tenders, pierced with fork
2 TBSP + 1 tsp grapeseed oil or olive oil
1 TBSP Hidden Valley Homestyle Italian Seasoning Mix
12 oz box of Rozoni Garden Delight Pasta Blend
2 1/2 cups assorted cut-up vegetables (broccoli, carrots, tomatoes, onions, red pepper, squash, mushrooms, or any vegetables you like)
1/2 cup shredded cheddar or mozzarella cheese
12 cherry tomatoes, quartered
1/3 cup sliced pitted ripe olives (optional)
1 cup Wish Bone House Italian dressing (I used fat free) any italian dressing will work
salt and pepper to taste
Mix together 1 TBSP Hidden Valley Homestyle Italian Seasoning Mix and 2 TBSP Grapeseed oil (or olive oil). Pour over chicken tenders and marinade in refrigerator for a minimum of 2 hours (longer for better flavor) I put my tenders and marinade mix in a gallon size ziploc bag and mix thoroughly. Grill or broil tenders. I used my George Foreman grill, but you can grill outside or broil in oven 5 to 8 minutes on each side until nicely browned and cooked through.
Cook 12 oz. box of Rozoni Garden Delight Pasta Blend as directed on box. Drain and Rinse with cold water, coat with 1 tsp olive oil or grapeseed oil and toss.
Combine vegetables, pasta, and cheese in a large bowl. Add Italian dressing and cooked chicken tenders. Mix well. salt and pepper to taste. Serve Chilled or at room temperature.
