TACO MEATLOAF

Meatloaf
1 lb ground beef, lean
1/2 c. finely crushed corn chips (2 small snack bags)
1 egg, slightly beaten
2 Tbsp. taco seasoning
1/2 c. salsa, thick & chunky
1/2 c. shredded cheese
Meatloaf Topping:
1 can refried beans or 2 cups
1/4 c. salsa, thick & chunky
1 c. shredded cheese
Optional Toppings:
Sour cream, Onions, Lettuce, Guacamole, Taco sauce, Tomatoes
Combine meat, chips, egg, 1/2 c. cheese & 1/2 c. salsa. Press into pan.
Mix together beans and 1/4 c. salsa in another bowl. Spread this over the top of unbaked meatloaf.
Conventional Oven:
Preheat oven 375°. Lightly coat bundt or loaf pan with cooking spray.
Place in oven and bake 45 min. or until fully cooked. When you have 5 min to go on baking time, sprinkle 1 cup cheese over top of meatloaf and continue to bake until done.
NuWave Oven:
Power: High
Time: 40-45 minutes
Vent: No
Rack: 1"
Lightly coat bundt or loaf pan with cooking spray. (Silicone is what was used here.)
Place in oven and bake 40-45 min. or until fully cooked. When you have 5 min to go on baking time, sprinkle 1 cup cheese over top of meatloaf and continue to bake until done.
Top with optional toppings if desired.
