SUNSHINE CUPS

A very simple, economical, and healthy breakfast!
Sunshine Cups
Each muffin cup serving is 88 calories, 1 g carb, 5 g fat, 7 g protein, 88 g sodium.
Preheat oven to 400F. Lightly spray/grease muffin cups.
In each cup put one ounce fresh crimini mushrooms, broken up; 1 ounce raw broccoli florets; 1 Tbsp green onion, chopped. On top of this, crack 1 large egg - you may want to break the yolk, I usually do. Now cover with 1 gram shredded cheddar cheese.
Bake for 20 to 24 minutes.
I had two of these this morning with a half grapefruit and a half avocado. These can also be your mid-morning snack - 2 muffins.
If you have leftover meat from the night before’s meal, you can shred it up and put in an ounce to increase the protein content.
