1 green peppers, diced 1 lg onion, diced 1 head garlic, minched 1 pints cherry tomatoes, halved 2 C sugar snap peas, halved 8-10 lg chicken breasts, cooked and diced 3 -4 jars of Pesto Parmesan Cheese 1 Box multi-grain bowtie pasta , cooked Olive oil Salt and pepper as desired
1.Dice up all vegetables. 2.Place peas, onions and garlic in microwave safe bowl, drizzle with olive oil, salt and pepper. (or use steamer bags) 3.Cover with saran. Steam for 3-4 min 4.Place cooked chicken into large dish. 5.Add 1 jar of pesto, and steamed vegetables, gently stir. 6.Add 1 jar pesto, and tomatoes 7.Add cooked pasta to the mix and top with 1 jar pesto and Parm cheese. 8.Mix all ingredients together until well combined. 9.Add salt and pepper to taste. 10. Dish up and top with extra Parm cheese.
We like to serve it with Caesar salad and warm cheese buns! Variation: switch out the chicken for shrimp! Super yummy! Yield - 8-10 large servings
