SKILLET BANNOCK



Skillet Bannock
Makes 1 - 7" inch bannock, cut into 6 wedges
2/3 cup whole wheat flour
1/3 cup all purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3 Tablespoons skim milk powder
1/4 cup raisins
1/2 cup water
1-2 teaspoons olive oil
Mix dry ingredients together in bowl and stir in raisins to coat. Gradually add water and stir well.
Heat oil in a 7"-inch cast iron skillet. Spread batter in pan and cook over low heat for 10 minutes, until golden brown. Flip over and cook for another 4-5 minutes, adding a little more oil, if necessary.
Remove from pan and cool slightly. Cut into wedges and serve. ~ Enjoy!!
