SALMON AVOCADO SALSA

SALMON with AVOCADO SALSA
Ingredients: 
8 6oz pieces of Salmon (recipe can easily be adjusted for less)
2 Tbsp Olive oil
2 tsp salt
1 tsp ground coriander
2 tsp cumin
2 tsp paprika
2 tsp garlic powder
1 tsp chili powder
1 tsp ground black pepper
Avocado Salsa:
2 whole ripe avocados diced
1 red onion chopped
2 TBSP lime juice
½ large Jalapeno pepper (seeds removed and diced)
½ each of an Orange and Yellow Bell pepper diced (or your choice) approx 2 TBSP of each color.
1 TBSP cilantro chopped fine.
Directions:
Mix Dry Ingredients together in a small bowl.
Brush each side of salmon fillet with olive oil.
Rub each fillet with dry rub and refrigerate for 1-2 hours.
Salsa Directions:
Add avocado, onion, lime juice, peppers, salt and cilantro in a medium bowl and mix well. Place in refrigerator until ready to top fillets.
Place Salmon in oven (cold oven) and then pre heat to 400 ° …..as soon as oven hits pre heat temp…time for 10 minutes at 400°…. comes out perfect!!!!!!
Top with Avocado Salsa and ENJOY!!!!!!!
