MY COCONUT COOKIE

Michele Wrecsics’ Coconut Cookies
2 cups flour
¾ teaspoon baking powder
¼ teaspoon salt
¾ cup softened butter
1 cup sugar
1 large egg
1 teaspoon vanilla
1 ½ cup shredded sweetened coconut
Preheat oven to 375. Combine flour, baking powder, and salt in bowl. In another bowl, beat butter and sugar at medium speed until light and fluffy. Beat in egg and vanilla. Beat in flour mixture at low speed until combined. Stir in coconut.
Shape dough into a small ball in your hands. Drop on cookie sheet and flatten with a fork. Bake for 11-12 minutes. Transfer cookies to wire rack to cool down. Makes 3 dozen cookies.
