SPINACH LASAGNA

SUPER SIMPLE SPINACH LASAGNA

Ingredients:
Lasagna noodles, uncooked (healthier version, use whole wheat lasagna noodles)
Spaghetti Sauce (I use my homemade canned sauce)
Fresh Spinach (you can use frozen, but we like fresh better)
2 Fresh Tomatoes, chopped
Shredded Mozzarella Cheese (healthier, use low fat cheese)
Shredded Parmesan Cheese
*Optional items: Cooked and cubed chicken, cooked and crumbled bacon, black olive slices, mushrooms, onions, ricotta cheese, just about anything you can think of!!

Directions:
Spray the bottom and sides of lasagna pan (whatever size works for your family).
In bowl, combine spaghetti sauce and one diced tomato. You want the sauce to be somewhat runny (because you are using uncooked noodles, need to absorb the water) so add a little water or tomato sauce if necessary.

In layers, start with layer of sauce, noodles, spinach, optional ingredients, and shredded cheese. Layer at least twice, or whatever depth works for your pan.
Top with shredded cheese, and some more chopped tomatoes.
Bake covered at 350 degrees for about 45 minutes. Remove cover and bake approximately 15 more minutes, until top is bubbly. Remove from oven and let rest for about 10 minutes before cutting. Enjoy with some garlic bread and salad.....AMAZING MEAL THAT YOUR FAMILY WILL LOVE!!

This recipe is soooooo simple, and can be adjusted to just about anything your family desires!
