SALMON SALAD

Salmon Salad Pita Bread

Serves: 2

1 5 oz can salmon, in water & drained
6 olives, chopped
1/2 cucumber, sliced length ways in strips
3 Tbsp. Miracle Whip or Mayo
1 Tbsp. Chipotle Ranch salad dressing
4 Red leaf lettuce
Onion, sliced
2 Whole Wheat Pita Bread
salt & pepper to taste
3 Tbsp. Egg Beaters

Scramble eggs and set aside to cool slightly while you chop other veggies up.

Mix salmon, olives, salad dressing, mayo or Miracle Whip in small bowl.

Place a few leaves of lettuce on both sides of pita bread. Lay half of the sliced onion and cucumbers down on each pita. Put about 1/8 cup salmon mix onto each and spread from one end to the other on one half of pita. Sprinkle with salt and pepper.

Fold and enjoy!
