Low Carb Pizza Bites

QUICK, EASY & DELICIOUS! Ready in 15 minutes!

You will need:
Sliced Cucumber
Your favorite sauce (I used a garlic marinara sauce)
Sliced Colby Jack Cheese (or cheese of your choice)
Pepperoni Slices (or mini Canadian Bacon slices)
Olive Oil spray
Minced Garlic

Preheat oven to 350° F. Spray lightly with Olive Oil. Layer cucumber slices on a cookie sheet. Place about 1-2 tsp. sauce on each cucumber slice. Place 1 slice of cheese, cut to fit cucumber ring. Top with pepperoni slice. Bake in oven for 10 minutes.

You can add additional toppings such as green pepper, onion, olive slices, etc. just do it very sparingly so the toppings don't slide off.
