OATMEAL PUMPKIN MUFFINS

Oh yummy! Gotta try these! 🎃 🎃 🎃
<3 Oatmeal Pumpkin Muffins - Absolutely delicious and clean eating <3
2 cups rolled oats
1 tsp baking powder
2 tsp pumpkin pie spice
1 tsp nutmeg
2 tsp cinnamon
1 cup pumpkin puree (not pumpkin pie filling)
1 egg
¼ cup pure maple syrup
1 cup unsweetened almond milk (any milk will work)
¼ cup unsweetened coconut
¼ cup chopped pecans
¼ cup pure semi sweet chocolate chips (can use dark choc chips)
Mix all dry ingredients together in one bowl and all wet ingredients in another. Once well mixed, combine the two bowls and mix well. Let sit for 5 minutes to thicken the mixture. Fill muffin tins to top as they do not rise. Bake at 350 degrees for 30 minutes or until center is set. Let cool completely prior to taking them out or they will fall apart.
