Laura's Corn and Tomatoes ( Awesome Side Dish)
2 Tbsp Butter
1 Tbsp Olive Oil or Coconut Oil
2 Cobs Fresh Corn
1 Tbsp Crushed Garlic
1 Med - Large onion
3 Tbsp Oregano
1 Tbsp Basil
1 Tsp Seasoning Salt
Pepper to taste
1/2 cup Water
First melt butter and olive oil in frying pan. Dice up half of large onion and add garlic, I have the kind in a jar and put a tablespoon of it in there, Get the onions al a dente, just about clear. While this is cooking, Take corn and shuck then in a bowl take the corn off the cob. After the onions are ready, add the corn, and then add about Oregano, Basil, Seasoned salt (and pepper if wanted) Then mash up can of stewed tomatoes, add them to the mix, Add 1/2 cup of water and simmer for 15 - 20 minutes, covered. Then take the lid and let some steam escape, and check and when there is no fluid left it is done.
