Morning On-The-Go Cookies
These are great any time of the day!
½ c. peanut butter
½ c. Honey
½ c butter or margarine
1 tsp vanilla
1 egg
½ c. flour
½ c. whole wheat flour
½ tsp. baking powder
¼ tsp. baking soda
1 c. quick cooking oats
½ c. flaked coconut
½ c. trail mix
½ c. Honey

¼ tsp. baking soda
1 c. quick cooking oats
½ c. flaked coconut
½ c. trail mix
Preheat oven to 350°
Beat first 5 ingredients until well blended.
Mix flours, baking soda and baking powder, then gradually beat in to peanut butter mixture until well blended.
Stir in remaining ingredients.
Drop Tbs of dough, about 2 inches apart on to baking sheets. Use a fork to slightly flatten. (wet fork with water to stop dough from sticking to it)
Bake for 9 – 11 minutes or until golden brown.
Cool completely.
Makes about 18 – 20 cookies.
Just sweet enough to satisfy the craving.
