Ingredients
3 cups of reduced sodium chicken broth
1 large package of baby broccoli florets (thawed or steamed)
1/2 cup chopped onion
1 lb of ground beef (or turkey burger)
3 1/2 cups milk
8 tbs wheat flour (or whatever kind you prefer)
4 to 4 1/2 cups of shredded sharp cheddar cheese
2 tsp dried oregano or 4 tsp of fresh oregano
Salt & Pepper to taste
Hot Pepper sauce (optional)
Directions
1. Bring broth to boil in large saucepan. Add broccoli and onion; cook 5 minutes or until broccoli is tender
2. Meanwhile, brown beef in a small skillet. Drain fat. Gradually stir milk into flour in a small bowl until well blended. Add milk mixture and ground beef mixture to broccoli mixture; cook, stirring constantly, until mixture is thickened and bubbly. (This takes awhile at least 30 minutes)
3. Add cheese and oregano; stir until cheese is melted. Season to taste with salt, pepper, and pepper sauce.
Makes 8 servings
Allow 1 to 1 1/2 hours to make from start to finish.
