BAKED CAULIFLOWER

Baked Cauliflower Parmesan 

preheat oven 450 degrees

Ingredients
1 lg head cauliflower
1 8oz. bag skim milk shredded and 1 8oz. whole milk shredded mozzarella cheese
2 - 1/2 cups of grated romano cheese plus a pinch to sprinkle
pepper to taste
1 - 32oz container whole milk
4 eggs
food processor or hand grater
4 quarts meat sauce (optional)
baking pan (size 8x11 or 9 x12 > same width/length as cookie sheets)
parchment paper
reynolds wrap

Make cauliflower pie like crust shells
1 head cauliflower (put in food processor to grate)
1 - 8oz bag skim milk shredded mozzarella cheese
1/2 cup grated romano cheese
pepper to taste
2 eggs
food processor or hand grater

Make filling
1 - 32oz container of ricotta cheese
1 - 8oz. bag shredded whole milk mozzarella cheese
2 eggs
pepper to taste
Grate cauliflower then Mix ingredient well... mixture will be moist ...divide mixture in half.

Spread on cookie sheet lined with parchment paper, flatten and bake 20 -25 mins until lightly golden brown at 450 degrees. while crust is baking >Mix filling well When pie like crust shells are cooked... Let cool when ready to use remove from parchment paper

Prepare as you would in layers, a lasagna
place meatsauce to cover bottom of pan
place one shell
spread cheese filling to cover shell
pour meatsauce to cover cheese filling
place 2nd shell
spread meatsuace to cover shell, then sprinkle with grated cheese
cover with reynolds wrap
bake in preheated oven about 20 - 30mins, to blend and heat through
