Japanese Gomaae Salad (serves 2-4)

Even the kids will eat their spinach - this is THAT GOOD!
Prepare spinach first wash well
200 grams of fresh spinach, rinsed and lightly steamed
cool immediately, squeeze out as much liquid as possible, set aside. Dressing
Combine 1 tbsp. rice wine vinegar (or regular)
1 tbsp. tahini paste (or 1/2 tbsp peanutbutter)
1/2 tbsp. sugar
1/2 tsp. seasalt
Toss dressing through spinach and chill.
Eaten as a side-dish with rice and BBQ meat. Doubles easily.
