Butterscotch oatmeal cookies.
1 cup shortening
2 eggs
1 tsp vanilla
1 cup brown sugar packed
1 cup sugar
1 1/2 cup flour
1 tsp baking soda
sprinkle salt
2 cups long cooking oats uncooked
1 package butterscotch chips
Using electric mixer blend shortening, eggs, vanilla , sugars together , mix well.
Add flour ,baking soda, salt blend well scraping side of bowl . Hand stir in oatmeal and butterscotch chips
Drop by teaspoonfuls onto a greased cookie sheet
Bake at 350' for 8-10 minute
Makes about 5 dozen

Crock Pot Maple Nuts
.
2 tsp coconut oil
1 cup of mixed nuts
1/2 tsp sea salt
2 tbsp maple syrup
1/2 tsp vanilla extract
.
Turn crock pot on high. Put 2 tsp coconut oil in bottom and rub all around the bottom of crockpot.
Stir together maple syrup, vanilla, and sea salt until blended.
Put in mixed nuts and toss with a spoon until fully coated.
Spread the coated nuts in the base of the crockpot in a single layer.

Cover and cook on LOW for approx 1½ to 2 hours gently tossing every 30 minutes.

5 Tbsp Soy Sauce
31/2 Tbsp Olive Oil
5 tsp Honey
1 1/4 lb Chicken Breasts or Thighs Cut up
2 Green Onions ( Shallots) thinly sliced
1 Tbsp. Fresh Ginger (grated)
3 Cloves Garlic (minced)
1 1/2 cups Chicken Broth
4 tsp. Cornstarch
1 Tbsp Rice Vinegar
1/2 tsp Sriracha Sauce
1 Head of Broccoli cut into florets with the stems sliced thin. Steam 6 mins
1 Tbsp Sesame Seeds
Brown Rice, cook according to directions

Add cut up chicken stir till completely coated and let marinate in the fridge for 20 minutes.
Using 2 tbsp of olive oil, cook chicken in skillet until brown throughout. Remove when cooked and set aside.
Using same skillet, add 1 tbsp olive oil and heat. Then add onions, ginger, and garlic. Stir and cook 2 - 3 minutes on medium.
Mix together in a bowl, broth, 2 tbsp soy sauce, 3 tsp honey, cornstarch, rice vinegar and srirachi sauce.
Pour sauce into skillet and cook till thickened about 3 - 5 minutes.
Once thickened pour over chicken.
Serve with steamed broccoli and Brown rice
Sprinkle with sesame seeds.

SKINNY FIBER STORY
This is my friend Jackie's Dad!
Had to share my dad's update He looked do awesome yesterday we took a new photo!!!
He is 85 years old.... had a quintuple by pass ---cancer twice and diabetic--- has lost over 40 pounds and his blood sugar has been best in many years.. his waist has shrunk from 40" to 34" He is amazing and has added years to his life but mostly life to his years not being diabetic anymore--- he is a Harley rider I am thankful everyday that I found Skinny Fiber -- now we will have him around much longer....He just got a new Harley!!!

I am just amazed at what I see everyday in the mirror now, that I have to share. 49 lbs gone as of this morning and these are a size 16. I am so proud of my accomplishments that I just have to keep sharing them. This is from March 1st to today. There was a month or two I did not eat the best either. And I am now working out 5 days a week. Skinny fiber works and it has been a god send in my life first it took away the hot flashes and I am back in the same size I was prior to my hysterectomy a year ago. I feel amazing and now I have a new goal - size 10 here I come. You can do this, be consistent with taking it and realize that everyone loses at their own rate. I am thankful for my SKINNY FIBER!!!! 1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts
1/2 cup vegetable oil

2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts
6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
1/4 cup margarine

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

Tayna's Roasted Veggie Frittata
You can use any vegetables you prefer and you can also add in cooked bacon, sausage etc.
Ingredients
1 1/2 cups fresh broccoli cut into small pieces
1 zucchini cut into bite size pieces
1 yellow onion diced
10 cherry tomatoes cut in half
9 eggs
1/2 cup skim milk
1/4 cup parmesan cheese
salt & Pepper to taste
Olive Oil

In a medium saute pan add 2 TBSP olive oil and heat to medium to medium high heat. Add in the broccoli, onions and zucchini and pan roast until slightly brown (or to personal choice - I prefer mine more roasted).
Pour roasted veggies in an 8x8 casserole dish or a 9 inch pie plate. Sprinkle the parmesan cheese over the vegetables. Add halved cherry tomatoes.
Meanwhile beat 9 eggs with the milk until thoroughly mixed. Add in salt and pepper to taste.
Pour egg mixture over the top of the vegetable mixture. (If using a pie plate, the egg mixture will be at the top, but should not boil over. As a precaution put the pie plate with Frittata mixture on a cookie sheet while baking.)
Bake at 350 degrees F for 35 to 45 minutes until eggs in center are cooked through. Allow to cool slightly before serving.

3/4 C. Pumpkin Puree
2/3 C. Brown Sugar
1 tsp. Pumpkin Pie Spice
1 1/2 tsp. Salt
1/2 tsp. Ground Pepper
1 tsp. Worcestershire Sauce
1 tsp. Maple Extract
Hamburger Buns

We just finished these for breakfast. So super simple and very good! Great for low carb! Don't serve plain ol' boring eggs & bacon, make these instead and WOW those you are cooking for!
Spray muffin pan with olive oil. Line each cup with 1 piece of bacon. Keep it somewhat flush with the side of the cup. Crack open 1 egg in to each cup, inside the bacon ring. Add your favorite seasonings, (I just use pepper). Bake in the oven on 375° for 20 minutes for hard eggs, 15 minutes for medium. Remove from oven. Top with salsa, cheese and whatever else you want.
You can really play around with this! You can add some chopped onion, peppers, pretty much anything you want in the bottom of the cup before adding the egg! Or even whisk the eggs and your added veggies in a bowl before pouring it in to each cup!

It's time for me to stop hiding. I have been shouting to everyone I know about Skinny Fiber but have not really put myself out there, just to my friends and family.

8 red potatoes, cubed
2 cups shredded cheese (your choice)
1 lb cubed fully cooked ham
3/4 cup diced sweet onion
2 cans (10 oz size) cream of celery soup, undiluted
2 cans of milk (use the soup can to measure)
4 tbsp all-purpose flour
3/4 tsp pepper

Directions
In a greased (sprayed) slow cooker, layer the potatoes, cheese, ham and onion.
