Taco Soup
Ingredients:
1 lb Ground Beef or Turkey
2 Cans of Beans of your choice (I used Black Beans and Kidney Beans)
1 Can Corn
2 Cans Rotel (diced Tomatoes and Green Chilis)
2 Packets Taco Seasoning
1/3 Chopped Onion
2.5 Cups Water
1/3 Block Velveeta (or 8 oz cheese of your choice)
Salt and Pepper

Directions:
Salt & Pepper the meat and brown the meat and chopped onions until cooked through. Drain if needed. Add Taco Seasoning Packets and 1 cup water. Cook through til heated and mixed thoroughly.

Add to pot. (I used a Bean Pot... love this thing!!) Dump undrained beans, Rotel, and Corn into pot and add remaining water. Heat thoroughly on medium heat until heated through. (If using Bean Pot, you can do this step in the microwave for 10 minutes.)
Add chopped velveeta (or cheese of choice) and continue heating and stirring constantly until cheese is melted. (if Bean Pot, add chopped cheese and put back in microwave for 10 more minutes or until cheese is melted.
Hubby said too bad we don't have any corn chips. We didn't, so I heated up some taco shells and crunched them up in the individual bowls of soup.
