OOEY GOOEY BROWNIE DELIGHT

Love the taste of brownies and chocolate pudding??!! This is very similar to that!!!! YUMMMM!!! ** VERY RICH - NOT A DIET FOOD!! **
Ooey Gooey Brownie Delight

Ingredients:
1/2 cup + 6 Tablespoons (divided) unsalted, softened butter
1/3 to 1/2 cup light brown sugar
1 large can pineapple rings (drained)
Maraschino cherries
1 cup granulated Swerve, Stevia (or regular sugar)
2 eggs
1 Tablespoon Rhum flavouring
1/4 cup finely chopped Macadamia nuts
1/2 cup almond flour (or regular flour)
1/2 cup cocoa powder
1/4 teaspoon sea salt
Turn on oven to preheat it at 350F. While it is warming up, put 6 Tablespoons unsalted butter in a 8" x 8" pan, and set it in the oven to melt. DO NOT FORGET ABOUT IT!! You do not want the butter to boil - just melt!
When butter is melted, remove from the oven and sprinkle 1/3 to 1/2 cup of brown sugar over the butter. Now arrange pineapple rings over the brown sugar and put a cherry into the center of each ring.
In a medium-sized bowl, blend 1/2 cup unsalted, softened butter with sugar. When thoroughly combined, beat in eggs, Rhum flavouring and the chopped nuts.
In a small bowl, thoroughly mix together dry ingredients. Add dry to wet and fully incorporate. Drop by spoonfuls onto the pineapple rings and smooth with a knife.
Bake for approximately 25 t 30 minutes or until toothpick inserted in center comes out clean. Do NOT put the toothpick all the way to the bottom of the pan because the moisture from the pineapple will cause it to look uncooked. Only bake until brownie tests done.
Remove from oven. Place on cooling rack for 10 minutes. Invert onto serving plate and allow to completely cool.
This dessert is VERY RICH!!! It will be gooey because of the melted butter and brown sugar. Is more like a combination of chocolate pudding and a brownie!! ~ Enjoy!!!
