Orzo and Squash
Ingredients:
Squash Mine was from last season, so it was a 1 QT bag of cubed squash
1 can diced tomatoes
Mushrooms (optional)
2 cloves garlic
1/3 sweet onion
1 T beef bullion
1 cup Orzo
Water

Method:
1. Saute Orzo, garlic, onion and mushrooms in a splash of EVOO
1. Saute Orzo, garlic, onion and mushrooms in a splash of EVOO
2. Once Orzo is browned, add the Beef bullion and water. I eyed the water as I wanted the Orzo to be a little A'dente . simmer until Orzo is almost done, add more water if needed.
3. Remove Orzo mixture from skillet ,
4. In same skillet, saute squash with diced tomatoes, when squash is cooked to your preference add back to the pan the Orzo mixture.
5. Simmer until heated through.
**I added onion powder, garlic powder and Pepper to taste to the squash while it was cooking.**
