1 large eggplant, cut into ¼ inch slices
Salt and pepper to taste
1 jar spaghetti sauce (your choice)
1 small package mozzarella cheese
Baby portobello mushrooms, sliced
1-1 pound pkg. ground turkey
Preheat oven to 400
Spray cookie sheet or 9 by 13 pan with Pam
Place eggplant slices in pan drizzle with olive oil, and salt and pepper each slice, also sprinkle with Italian seasoning
Bake in preheated oven 15 min.
While baking cook ground turkey then drain add sliced mushrooms put lid on pan and cook till mushrooms are tender
Pull eggplant slices out of oven top each slice with meat mixture and then top with mozzarella cheese
Put in oven for 5 to 7 minutes till cheese is melted.
