TACO POCKETS




Here's An Awesome Recipe!!! It's My Own, Very Yummy!!! It was A Big Hit With All The Kids 

Taco Pockets

Ingredients
2 lbs of Ground Chicken
2 Packets of Taco Seasoning ( I use Mild) or you can make your own
Refried Beans ( I take a large Can of Pinto Beans and Make My Own)
1 large packet of tortillas ( I used small size)
Coconut Oil or Vegetable Oil
1 package of cheese ( Taco or Mexican Fiesta Blend

Directions: Cook the ground chicken over medium high heat till well cooked drain the excess fat off and put back in the pan add the taco seasoning and add 2/3 cups of water x 2 put back on the stove to simmer. While that's simmering you can make your refried beans. Once the meat is done simmering you will take the tortillas and put the filling inside the middle be careful to not over fill. First put a layer of beans, than a layer of meat, and a layer of cheese than you will fold the sides of the tortilla in and then the front and the back layer of the tortilla. Place the taco pockets on a plate once they are all filled you will fry them in a frying pan not a lot of oil, till the bottom of the frying pan is covered let it get hot, put on medium high till oil is hot then turn down. Add the Taco Pockets and fry them till brown on both sides then lift them out with a spatula making sure to get all the access oil off of them place on a plate and pat dry them with a paper towel.
Enjoy!! You can serve with Spanish Rice!!!!
