Seafood Rice

1 Cup Medium Grain Rice
1 Half Red Bell Pepper
1 Half Green Bell Pepper
1 Large tomato
3 Tbs of minced Garlic
2 Cups Seafood Stock (or Chicken)
Pinch of saffron, Salt & Pepper to taste,
2 Tbs Olive Oil,
1/4 lbs Calamari, 1/4 lbs mussels(without the shell), 1/4lbs Shrimp or any white fish like cod.

Dice all the vegetables, sauté the onion add the bell pepper, minced garlic , tomato, rice, stir for 2 minutes and add seafood stock, saffron and then the seafood. Cook for 20 minutes over medium high heat, uncover and cook for another 10 minutes. Bon Appetit!
