There are two versions here as we made regular pancakes and gluten free ones!
Take your pancake of choice and mix it together per directions on the box. Put the oven on 350 and pre-heat. Take a muffin pan (would be great with mini muffins too!) and spray with a baking oil, then fills each muffin spot 3/4 of the way. You can then add in some ingredients like chocolate chips, blueberries, or even bacon pieces and push it in to the batter a little. Then bake them for 10-12 minutes. The mini muffins will be ready much faster so I would check them at 4-6 minutes. Serve with syrup or eat plain!
