VEGETABLE EGG CHEESE MUFFIN


☆●♡ Veggie, Egg 'n Cheese Muffins ♡●☆•

I spent some time in the kitchen this afternoon prepping some food for the week, cooking chicken breasts, washing veggies, making salad... While I was at it, I made these!
Spinach, grape tomatoes, orange peppers, red peppers, zucchini, broccoli, and some grated old cheddar!
Whisked together a dozen eggs, fresh ground black pepper, a dash of salt, some garlic powder, and 4 Tbsp of parmesan cheese!
Drop the variety of vegetables in a sprayed or oiled muffin pan, add a pinch of parmesan cheese, and a pinch of old cheddar on top... Then 1 ladle of the egg mixture on top and bake at 425° for 20-25 minutes. Watch them till they're golden brown on the top, then they're ready!

I baggied 2 per bag and froze for grab 'n go breakfast or protein!!
