CALIFORNIA CHICKEN CASSEROLE

California Chicken Casserole
1 1/2 cup shredded cooked chicken
1 16 oz bag California vegetable blend, thawed
1 cup shredded low fat cheese, I used the taco blend
1 small onion, chopped
2 celery stalks, chopped
1 tablespoon olive oil
Saute the onions and celery in the olive oil til light brown. Preheat oven to 350. In a 9 inch square baking dish, cover the bottom with the chicken. I mix the sauteed veggies and the California blend together and place it on top. then sprinkle the cheese over the top of everything and bake for 30 minutes.
