MAHI MAHI

If you don't like fish, you've got to try Mahi Mahi! It is so mild and grilled, it is fabulous....yes, tastes like chicken! lol
Low Carb meal...try Cauliflower rice!

Caribbean Mahi Mahi
1 lb. Mahi Mahi (or other thicker white fish like Cod)
2 tablespoons lime juice
Sea salt

1)Rinse and pat dry fish. Place in flat casserole dish.
2)Pour lime over fish and turn over to coat. Let marinate in refrigerator for 30 minute minimum
3)Take out of marinade, salt and grill. Approximately 4-5 minute each side depending on thickness.

Mango Salsa:
½ red bell pepper chopped
1 ripe mango chopped in same size pieces as pepper
¼ cup cilantro chopped
Avocado (optional)
Squeeze of lime
1 Tablespoon olive oil
1/2 garlic clove minced
Sea salt

Put all ingredients in bowl.

Cilantro Lime Cauliflower Rice:
1 head cauliflower
½ cup cilantro chopped fine
1 teaspoon lime juice
½ teaspoon granulated garlic
Sea salt to taste.

Preheat oven to 425.
1)Remove core of cauliflower then break into pieces.
2)Place in food processor until it resembles rice
3)Place cauliflower on a baking sheet and place in oven for 15 minutes.
4)Add cilantro, lime, garlic and salt.
