ZUCCHINI BREAD

ZUCCHINI BREAD <3

2 c. sugar ( I used 1 cup sugar and 1 cup stevia)
1 c. oil ( I used coconut oil )
3 eggs
3 c. flour ( I used gluten free flour )
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon (add to taste)
1/2 tsp ground ginger
2 c. grated fresh zucchini
1 c. nuts
1tsp. vanilla
Optional:1/2 cup chocolate chips ( I used carob chips)
1/4 cup brown sugar
Mix ingredients together - in order! Sprinkle with brown sugar.
Bake at 350°F, 50 minutes.
Great as muffins, too!
Makes 2 loaves.
