Bruschetta with Melted Fresh Mozzarella and Tomato Salad
Ciabatta bread loaf – sliced diagonally into approx. ½” thick slices
1 garlic clove, peeled
1 container of fresh mozzarella (sliced if necessary or purchase the small 1” mozzarella balls)
3 TB olive oil
Salt and pepper
Fresh basil leaves
5 plum tomatoes, diced
Preheat oven to 450F. In a small bowl, combine the tomatoes, olive oil, salt, pepper and basil. Taste and adjust seasonings for your taste. Set aside.
Place the sliced ciabatta bread on a sheet pan and bake in oven until beginning to crisp. About 8 to 12 minutes.
Remove the ciabatta from the oven and rub both sides of each slice of bread with the garlic clove (the bread will act like sand paper to the garlic). Place the mozzarella on top of the ciabatta, return to the oven and cook an additional 5 to 8 minutes or until mozzarella is melted. Remove from oven. Spoon tomato salad over melted mozzarella and serve.
