Cook one box of spiral pasta and set aside. DO NOT OVERCOOK as it will finish cooking in the oven.
Meanwhile, bring 2 cups of almond milk to an “almost boil”.
When almond milk is nice and hot, add 4 cups of shredded cheese ( I used a mix of cheddar and pepper jack) and stir until all melted.
For added heat, I also added some red pepper flakes.

Drain pasta and put in casserole dish lightly sprayed with Pam.
Pour cheese sauce over pasta.
Add thin layer of breadcrumbs to cover the top. I prefer the Italian seasoned breadcrumbs but only had Panko at the time.
Place in 400 degree over for 45 minutes.
Remove from oven and let set of 10-20 minutes as it will be VERY HOT and will thicken some more while resting.
