These cookies are DELICIOUS!! The combination of spices, raisins and rolled oats give them a delightful flavour!
Raisin Cookies
1/4 cup unsweetened applesauce
1/4 cup canola oil
3/4 cup packed brown sugar
1 egg
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 tsp vanilla extract
1 cup quick cooking rolled oats
1 cup all purpose flour
3/4 cup raisins
(can also add 1/4 cup sesame seeds or 1/4 cup finely chopped walnuts, or even 1/4 cup of unsweetened shredded coconut)
1/4 cup canola oil

(can also add 1/4 cup sesame seeds or 1/4 cup finely chopped walnuts, or even 1/4 cup of unsweetened shredded coconut)
Preheat oven to 350F and lightly grease a cookie sheet. (I have stoneware so I don't bother with the greasing part.)
In a large bowl, cream together applesauce, oil, and brown sugar. Beat in egg.
Add in the dry ingredients and raisins (sesame seeds and / or walnuts too). Mix until well combined. Batter may be a little bit runny. Drop by well rounded tablespoonfuls onto the cookie sheet at least 2 inches apart (they do spread out a little bit).
Bake for 10 to 12 minutes until golden brown. Let cool for 5 minutes on rack before removing from sheet. ~ Enjoy!!
Makes about a dozen cookies.
